Set the Cooling Rack over a sheet pan, like the Our Place Oven Pan in Turmeric, then use the Skimmer Spoon to lift your fried treats out of the hot oil and set on the rack. To light the diyas, rub the cotton till it becomes a thinner thread, fill the diyas with oil (mustard oil, ghee, & sesame work great), place the wick in the oil and trailing out of the diya and light. Do not blow out flame, let diya burn all the way down. Allow to fully cool before picking up and cleaning.
