- ¾ cup (177ml) cow’s or plant-based milk
- ¾ cup (177ml) water
- 1 tablespoon (7g) Masala Chai Blend
- 1 to 3 teaspoons Madhur Jaggery, or the sweetener of your choice

- Combine all the ingredients in a small saucepan over medium-high heat, and bring to a boil.
- Reduce to the high end of medium-low and simmer for another 3 minutes. Repeat this boil-and-simmer process 1 to 2 times. (This is the step that gives your chai a creamy, caramel-y mouthfeel.)
- Strain through a fine-mesh strainer into a cup, taste, and sweeten with more jaggery, if you wish. Enjoy steaming hot.
For iced chai
Use 1½ cups of cow’s or plant-based milk (the ice will dilute it!) instead of milk and water, and follow the method above, but strain and let cool for 10 minutes, and then pour over ice.
