Cooking tips

Swap in for brown sugar.

Use as a 1:1 swap for light or brown sugar in both sweet and savory recipes.

Make jaggery simple syrup.

Combine 1 cup water and 1 cup jaggery in a small saucepan and heat over medium-high heat until the sugar is fully dissolved. Cool, transfer to a bottle, and refrigerate for up to 1 month. Use for cocktails, sweetening your morning coffee, or other drinks.

Whip up a sweet-spicy-tangy rim for drinks.

Mix 1½ teaspoons sumac, 1 teaspoon powdered Guntur Sannam Chillies, ½ teaspoon jaggery, and ½ teaspoon sea salt.

Our Madhur Jaggery comes from the heart of India’s sugar country: Pargaon, Maharashtra, where the streets are lined with fields of sugarcane, their gangly stalks rustling in the breeze. Unlike most farms in the region however, our jaggery is naturally farmed, yielding a complex flavour, with earthy notes of caramel and toffee.

It is grown by the Randive family on their organic 10-acre farm, where water is plentiful and the soil is mineral-rich. The farm is home to a variety of creatures, from kingfishers and baya weaver birds to peacocks and tigers that visit after sundown.

Harvesting the sugarcane at the right time is crucial. Under- or over- aged canes yield poor quality juice, which impacts the flavor profile and sugar levels. Ours are harvested every 12 months, for maximum flavor, sugar content, and that deep golden colour.

After the canes are harvested, they are juiced and heated in large vats, using the cane fibre leftover from the juicing process. The liquid is clarified with the pulp of okra plants, which removes impurities in texture and flavour. Ingenious!

When do the spices expire? How long do they last?

Most of the spices are good 2 years from the mill date, which is listed on the harvest label sticker on the jar or bag. That being said, our spices are extremely potent and fresh as we take incredible care to source yearly and aim for quality, so 2 years is our most conservative guideline, compared to most spices in the grocery store which are often 5-10 years old upon purchase.

Are all your spices organic?

Our farm partners have been cultivating spices using practices that go "beyond organic" for well over five years. Although they haven't obtained USDA certification yet, this is primarily because the initial certification can be costly and may lead to cycles of debt. To meet USDA standards, four years of inspections and certificates are required after the first certification. However, we consider this process redundant and unnecessary since we conduct thorough testing on every batch we procure. It's a prerequisite for Diaspora Co. to select farm partners whose soil health and agricultural practices align with our internal standards of growing food regeneratively.
