When it comes to adding spice to overnight oats, there's a trick to it. Instead of just mixing everything together, part of the liquid is heated with the spices, allowing the warming flavors to bloom and tame any raw spicy taste. Then, the rest of the liquid, yogurt, and sweetener is mixed in, which cools the liquid down so you aren't adding the oats and chia seeds to boiling hot milk. After an overnight rest, the result is a comforting bowlful that is great cold or can be heated up on the stove or in the microwave. The most fun part about overnight oats is really what toppings you choose—we like a mix of seasonal fruit and either nuts or some store-bought granola for crunch, plus a little sprinkle of flaky sea salt to lift everything up. And, if you really want to get fancy, you can add a drizzle of tahini or a spoonful of your fave nut butter, jam, or fruit curd.
A note about texture: If you like your oats on the thicker side, reduce the milk of your choice by ¼ cup (using 2 cups total). Also, some people like to blend their overnight oats for a smoother texture, but we prefer a more rustic texture.
