Yewande's Coconut, Turmeric, and Lime Dressing
This dressing is incredible over roasted vegetables, as well as a crunchy bowl of arugula!
Ingredients
- ¾ cup coconut milk (whole)
- 1 teaspoon ground Pragati Turmeric
- 1 inch piece of ginger, grated
- 1 tablespoon honey
- 3 tablespoons lime juice
- 1 tablespoon lime zest
- 2 scallions, trimmed sliced
- 3 tablespoons olive oil
- salt, to taste
- cracked Black Aranya Pepper, to taste
Methods
- Using a whisk (or an immersion blender), in a small bowl combine the coconut milk, turmeric, ginger, honey, and lime zest. Whisk in the lime juice and the oil until emulsified.
- Stir in the scallions and season to taste with salt and cracked black pepper.
- To serve, spoon dressing generously over your favourite roasted vegetables, a salad, or a grain bowl!
