This dressing is incredible over roasted vegetables, as well as a crunchy bowl of arugula!
Yield: 1 cup
- ¾ cup coconut milk (whole)
- 1 teaspoon ground turmeric
- 1 inch piece of ginger, grated
- 1 tablespoon honey
- 3 tablespoons lime juice
- 1 tablespoon lime zest
- 2 scallions, trimmed sliced
- salt, to taste
- cracked black pepper, to taste
Using a whisk (or an immersion blender), in a small bowl combine the coconut milk, turmeric, ginger, honey, and lime zest. Whisk in the lime juice and the oil until emulsified.
Stir in the scallions and season to taste with salt and cracked black pepper.
To serve, spoon dressing generously over your favourite roasted vegetables, a salad, or a grain bowl!
