Cooking Tips

Brew a cup of ginger, cinnamon, and clove tea.

Add 1½ cups water and 1 cinnamon stick, broken in half, 8 to 10 cloves, and a couple slices fresh ginger in a saucepan, bring to a boil, cover, let steep for 10 minutes, strain, sweeten with honey, if desired, and enjoy.

Add to a pickling spice blend for root vegetables.

The warmth of cloves pairs particularly well with root vegetables, such as carrots and beets. Add 3 to 5 whole cloves to your pickling mix for the most aromatic pickled veggies.

Make a clove glaze for baked ham.

Instead of studding your ham with cloves, add ¼ teaspoon to ½ teaspoon ground cloves, depending on the size of your ham to the glaze.

Add warm depth to hot libations.

Add whole cloves to hot cocktails like mulled wine, hot buttered rum, hot toddies, and spiked apple cider.

Fragrant, earthy, and intensely flavored, these cloves are harvested from the Kandyan forest gardens of Sri Lanka, a diverse and canopy-rich ecosystem with native forest trees sharing space with mature nutmeg, jackfruit, and cinnamon trees.

They are picked and sorted for us by Ekoland, a community initiative that works with farmers and their families to grow food in a way that conserves the biodiverse forests and native flora of Kandy. The result is a highly productive landscape that also supports a wealth of wildlife.

Cloves are the dehydrated flower buds of the Syzygium aromaticum tree. Harvest is a short window: they have to be picked, by hand, when the bud has formed, but before the flower has developed.

Clove trees are tall evergreens, so harvesting is a delicate and cumbersome process. Once the buds are collected from the tree, they are gently dried to remove moisture, and intensify the flavors without losing any of their fragrant oils.

Frequently Asked Questions

What makes Diaspora Spice Co.'s Kandyan Cloves special?

Diaspora Spice Co.'s Kandyan Cloves are grown by smallholder farmers in Sri Lanka's Kandyan Forest where the flower buds are hand-harvested just before they bloom and carefully sun-dried. The result is an intensely aromatic clove with warm, sweet notes of eucalyptus, vanilla, and pepper that brings remarkable depth to both sweet and savory cooking.

How can I use Diaspora Spice Co.'s Kandyan Cloves?

Whole cloves for cooking can be bloomed in hot oil or ghee for curries, biryanis, dals, and rice dishes, or simmered in broths, stews, mulled cider, chai, and poached fruit. You can also grind them fresh for spice blends, cookies, cakes, and gingerbread, where their warm, sweet spice really shines.

What are whole cloves used for?

Whole cloves are one of the most versatile whole spices in the pantry. Use them to infuse flavor into curries, rice, soups, marinades, and drinks, or grind cloves for baking and spice blends as needed. Like many whole spices, cloves stay fragrant much longer than their pre-ground counterpart, so grinding them just before using gives you the brightest, most complex flavor.

Are whole cloves edible?

Yes, whole cloves are edible, but they're incredibly potent and have a woody texture. They're most often simmered in a dish to gently infuse flavor, then removed before serving, much like a bay leaf. If you're using cloves in baking or spice blends, grinding them first ensures they distribute evenly throughout the recipe.

Why cook with whole cloves instead of ground cloves?

Whole cloves retain their essential oils and aroma far longer than pre-ground cloves, making them a better choice for freshness and flavor. Whether you're simmering them whole in a curry or grinding them fresh for cakes, cookies, or spice blends, you'll get a brighter, more layered result with far less spice.

Are all your spices organic?

Our farm partners have been cultivating spices using practices that go "beyond organic" for well over five years. Although they haven't obtained USDA certification yet, this is primarily because the initial certification can be costly and may lead to cycles of debt. To meet USDA standards, four years of inspections and certificates are required after the first certification. However, we consider this process redundant and unnecessary since we conduct thorough testing on every batch we procure. It's a prerequisite for Diaspora Co. to select farm partners whose soil health and agricultural practices align with our internal standards of growing food regeneratively.

When do the spices expire? How long do they last?

Most of the spices are good 2 years from the mill date, which is listed on the harvest label sticker on the jar or bag. That being said, our spices are extremely potent and fresh as we take incredible care to source yearly and aim for quality, so 2 years is our most conservative guideline, compared to most spices in the grocery store which are often 5-10 years old upon purchase.

Do you sell wholesale?

We do! You can search for our wholesalers using our store locator here. And if you are a wholesaler and don’t see yourself on the locator, please email wholesale@diasporaco.com and we will add you to this ASAP! Thank you!

What is the best way to store the spices?

Store them in an airtight container in a dark, dry place. Do not store spices in direct sunlight, as this will shorten their shelf life.
