Cooking tips

Whip up the easiest hot cocoa.

Bring 1 cup milk to a simmer in a saucepan, add 2 tablespoons cacao powder, 1–2 tablespoons jaggery, and a pinch of salt. Whisk until the jaggery is dissolved, pour, and enjoy.

Use as a garnish for confections.

The intensity of unsweetened cacao powder is great for rolling chocolate truffles or using to dust homemade marshmallows.

Winner of the 2022 Good Food Awards, our cacao powder is a beautiful showcase of the potential of Indian cacao. It is deeply fruity, nutty, and exquisitely creamy, on account of its high cacao butter content (over 30%!). This is 100% raw cacao powder - no added sugar here.

Our cacao is named after the Anamalai Hills at the base of the Western Ghats, where it is organically grown by Harish Manoj Kumar and Karthikeyan Palaniswamy on their family farm. Their single-estate cacao is a true expression of terroir, or the soil it is planted in, and the seasons it grows through.

Anamalai cacao is intercropped with nutmeg and coconut palms, on land that was originally a eucalyptus grove, then a guava orchard, and now a diverse ecosystem where desi cows roam by day, and elephants scratch their backs on the coconut palms by night! The farm exists in harmony with its surrounding tiger reserve; the tigers are not warded off and are allowed to pass through the property as they wish.

Most modern cacao is processed using the Dutch method, where cocoa solids are treated with an alkalising agent to reduce the acidity. In contrast, Anamalai Cacao is non-alkalized, which retains its fruity notes and its naturally occurring nutrients and antioxidants.
